Recipe:

Tuscan Herb Chicken Breast

Servings: 4 | Prep Time: 10 min | Cook Time: 20 min

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 3 tbsp Tuscan Herb Olive Oil
  • 2 cloves garlic, minced
  • 1 tsp lemon zest (optional but brightens flavor)
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • ½ cup cherry tomatoes, halved
  • Fresh basil or parsley for garnish 

Instructions:

  1. Marinate the Chicken
    • In a small bowl, mix Tuscan Herb Olive Oil, garlic, lemon zest, salt, and pepper.
    • Rub mixture evenly over chicken breasts. Let sit for at least 15 minutes (or up to 2 hours in the refrigerator for deeper flavor).
  2. Cook the Chicken
    • Heat a large skillet over medium heat.
    • Add a drizzle of Tuscan Herb Olive Oil, then place chicken in the skillet.
    • Cook 6–7 minutes per side, or until internal temperature reaches 165°F and juices run clear.
  3. Add the Tomatoes
    • During the last 2 minutes of cooking, add cherry tomatoes to the skillet. Sauté just until softened and lightly blistered.
  4. Serve
    • Plate chicken breasts, spoon tomatoes on top, and drizzle with any remaining pan juices.
    • Garnish with fresh basil or parsley.
